The palm wood cannot be used to create palm planks. I also don't lose the coral bulbs, palm and tree decoration nodes when placing them on coral sand, but I'm not sure if it may be specific to them.
coral bulb (everness:coral_forest_deep_ocean_coral_plant_1) can be placed on everness:coral_forest_deep_ocean_sand
same goes for pam tree decoration - when you find it on coral forest deep ocean sand then you can place it on it also (not other sands or blocks)

The palm trunk/wood can now be converted to planks correctly, but the 2nd bug wasn't fixed, where I meant that if you have a coral bulb or similar in your inventory in non-creative mode and you place it correctly on everness sand, it isn't subtracted from your inventory for some reason. Then you can break the placed coral bulb/similar and repeat to have infinite.

Ah yes got you. Thank you for the calrification. This was definitely a bug and thanks for reporting. Fixed in the latest version.
