There doesn't seem to be any way to plant pumpkin plants like you can watermelon? Harvesting a pumpkin plant just gives the pumpkin and filling a grid with pumpkins or any combination doesn't yeild any seeds. Happy to be wrong/missing something but couldn't find anything else in the documentation either.

Placing a Pumpkin or Melon in the crafting grid with a cutting board next to it gives you slices which you can replant or eat :)
